Spring occupies the restored New Wing of Somerset House, the Grade I listed neoclassical landmark above the Strand, and has been Skye Gyngell's London home since 2014. The main dining room is one of the prettiest in the city: a high-ceilinged drawing room of pale columns, arched Georgian windows looking onto the courtyard and the buses on Lancaster Place, a long marble bar, soft cabochon-bubble chandeliers and a wall of hand-thrown porcelain petals that scatter across the plaster like blossom. The cooking is produce-led and quietly seasonal, much of it grown on Spring's own Fern Verrow biodynamic farm in Herefordshire, and the room was the first single-use-plastic-free restaurant in London.

For private events the heart of the offer is The Salon, an enclosed glass-roofed atrium set behind the restaurant. Its walls are cloaked in the cast flora-and-fauna reliefs of landscape designer Jinny Blom, a mature tree rises through the centre and the space stays bright through the year. It seats up to 36 and works as readily for an intimate dinner as for a ceremony beneath a floral arch. The full restaurant can also be taken exclusively, seating 116 or holding 150 for a standing reception, with a separate area that clears for drinks and a dancefloor.

The setting is the draw for a DJ-led evening: a beautiful, self-contained room inside one of London's grandest buildings, with in-house catering of real pedigree and an events team that tailors each booking. It leans elegant rather than late and loud, which suits a refined celebration well.
