Scales

Behind an unmarked door inside Drink with Sasha, an independent Mayfair bottle shop, a staircase drops to Scales: a small, dark room the co-founders opened in December 2023 and run with the quiet seriousness of a laboratory. Din Jusufi and Engji Shala, who spent five years together at Farzi London, built it around a single idea, that a cocktail should be clean, precise and consistent, and the room is equipped to deliver exactly that. Centrifuges and modernist extraction techniques strip flavours down and rebuild them into strikingly clear drinks; the seasonal menu leans on fresh, locally sourced produce and reads short.

The room itself is fluted ebony and polished black, lit low by frosted globe pendants, with tan leather banquettes gathered beneath a large Romantic-era painting and stools drawn up to a long central bar. Heavy curtains conceal a second, expandable bar for those in the know. Comparisons to the late Milk & Honey are earned rather than borrowed.

Scales runs as a walk-in for most of the week and takes larger groups by arrangement, and the whole room can be given over for a private reception through the house. Its scale, its low light and its discretion suit an intimate celebration, a launch, or a late nightcap where the guest list matters more than the numbers.
