KOYN is Samyukta and Dinesh Nair's Japanese restaurant on Grosvenor Street, a few steps east of Grosvenor Square, and the fifth Mayfair opening from their group LSL Capital. The concept takes its cue from Mount Fuji: calm on the upper slopes, fire below. Executive chef Rhys Cattermoul, formerly head chef of Nobu London, cooks modern Japanese food with a sushi counter at its centre and wagyu finished on a hot stone.
The ground-floor dining room draws on Japanese zen gardens. A rough marble sushi bar faces a painted mountain screen, and sage leather banquettes run beneath pale plaster walls, with a curved oak screen dividing the room. Below, a darker dining room under black oak ceilings is built around a live-fire grill.
Between the two sits the KOYN Bar, an izakaya-style room with high oak ceilings, green Verde St Denis marble and Japanese fretwork, where antique sake jars from Nagoya line the back bar and DJs play in the evenings. The whole house takes up to 140 seated or 200 standing, the dining room seats 60, and a private dining room behind sheer blinds takes 20.
