Chef Angelo Sato runs a single counter of thirteen seats wrapped around an open kitchen, where a binchotan grill and Japanese technique drive a sixteen-course omakase that changes with the season. The room is warm timber and blue-glazed tile, lit low, with the pass in full view; every guest watches their meal built an arm's length away.

Sato opened the restaurant in 2021 and rebuilt it into its current form, winning a first MICHELIN star in 2024 and a second in 2025. It is one of the most sought-after seats in London, and its scale is the point: thirteen covers, one sitting, no division between kitchen and table.
