Alex Dilling at Hotel Café Royal occupies the first floor of the Regent Street landmark, a pale, high-windowed dining room that looks out over the Quadrant's curve. The chef-patron opened his first solo restaurant here in September 2022 and held two Michelin stars within months; the room has kept them every year since. The cooking is modern French built on classical technique, served across tasting menus to a room of just 34 covers.
For private occasions the dining room is taken exclusively, seating around fifty for a seated dinner or a standing reception, with menus written for the evening. A chef's table set within the kitchen brings a party of six close to the pass, each course carried and explained by the team that cooked it. The events arm, Paloma, extends the kitchen to receptions and dinners beyond the restaurant itself.
