OMA sits on the upper floor above Borough Market, reached through the market's passageways. David Carter, the restaurateur behind Smokestak and Manteca, opened it in April 2024 as, in his words, "a London restaurant inspired by Greece", and in 2026 it became the first Greek restaurant in the UK and Ireland to hold a MICHELIN star, under head chef Jorge Paredes. The name comes from the Greek word for raw, a nod to a kitchen built around seafood, fire and a long charcoal grill.
The room is quiet and considered: earth-toned plaster, dark timber, low banquettes and a floor-to-ceiling wall of wine that runs the length of the dining room. A raw-bar counter looks out through tall windows over the market stalls, and a covered, heated terrace carries the tables out under the market's green ironwork roof. A 400-bin wine list, minerally and saline in character, anchors the whole floor.
For private events the Wine Annex takes groups seated at one long table beside floor-to-ceiling wine fridges, with French doors opening to a market-view balcony. The kitchen also serves family-style feasting menus for larger parties, and the wider restaurant and terrace can be arranged for a buyout through the house. It suits considered private dinners and celebrations that want a genuine kitchen at the centre rather than a party room.
