Do Not Disturb, known as DND, is the cocktail bar in the basement of Vintry & Mercer, and it opened with the hotel in February 2019. The way in is part of the room: a darkened tunnel tucked back on Garlick Hill, with a two-metre keyhole sculpture at the entrance.
The room takes its cue from the clandestine bars of 1920s New York. Hand-beaded images of Ziegfeld Follies girls line the walls, and guests settle into plush velvet chairs and leather banquettes. The bar pours barrel-aged and house cocktails alongside a menu of small plates, from 5pm until 1am, Tuesday to Saturday.
For private hire, the whole bar takes up to 60 guests seated or 100 standing, and it has its own entrance off Garlick Hill. It can be booked for an evening or during the day, any day of the week, and the hotel's events team can arrange a DJ or entertainment on request. Smaller groups of up to 30 can also be hosted during normal opening hours.
