Cambio de Tercio has held its corner of Old Brompton Road since June 1995, and remains one of London's defining rooms for contemporary Spanish cooking. The dining room is small and unmistakable: walls washed in bullring ochre, magenta and red, hung with bold matador and bull paintings, white-linen tables set close under warm light. It is a room with a temperament rather than a scheme, and it has drawn a loyal, well-heeled following for three decades, including a run of Wimbledon champions who make it their London table.
The kitchen works in pure Spanish flavours through modern technique, sourcing from Spain and the UK. Behind it sits a serious cellar: around 500 labels, reaching into every wine region of Spain, and one of the deepest Spanish lists in the city. A gin-and-tonic bar and attentive sommelier service round out the drinking.
For private events the whole restaurant can be taken exclusively, seating up to 45 or holding around 70 for a standing reception, with party menus, a chef's table and outside catering available. The scale is intimate rather than grand, which suits a milestone dinner, a birthday or a close corporate gathering better than a large function.
